Mahi Mahi-Blackened with Salsa Verde
Ingredients
- 1/2 C BBQ Rub--Recipe Here
- 1 tsbl Dried Thyme
- 2 tsbl Dried Basil
- 1 tsbl Chipotle Rub--buy here
- 1-2lbs Fresh Mahi Mahi from Stones Seafood China Grove NC
- 1C Salsa Verde
Directions
Pre heat grill to 450° with cast iron pan on grill.Wash and cut fish into 4" X 4" squares and set to side
Mix dry ingredients in a bowl big enough to dredge fish into. Put fish into dry rub, coating all sides.
Add 1/2" deep of extra virgin olive oil to cast iron pan on grill. Let olive oil heat up till it's nice and hot
Place fish into cast iron pan and cook each side 3-4 minutes or unit fish becomes opaque and flakes.
Put on plate and cover with 1/4 cup of Salsa Verde on each piece of Mahi Mahi
